2016 Shiraz Viognier

This wine is made from fruit (95% Shiraz 5% Viognier) grown on our vineyard at Lake George. It is cold soaked for 5 days before fermentation (up to 35º) with hand plunging 3 times a day, then pressed off to French oak barriques to mature for 11 months. The wine has an intense nose of red berries, plums, cinnamon, pepper, apricot and vanilla aromas with a rich and savoury palate backed by a long fine grain tannin finish. This wine will cellar for 5-8 years.

Food Matches: This wine will go with rich and/or spicy red meat dishes (stews or mild/medium curries), hard and washed rind cheeses, and rich chocolate tart.
